  1. 1

    Assemble all the ingredients.

  2. 2

Put the beef in a bowl and season liberally with pepper and kosher salt. Cover and refrigerate until needed; up to 1 day is fine.

  3. 3

With the root ends left intact, trim off the tops of the shallots. Peel and discard the skins.

  4. 4

Heat 2 tablespoons oil in a heavy skillet over high heat. Add half of the beef and sear until well browned, 4 to 6 minutes per side. Transfer to a plate and repeat to sear the remaining beef.

  5. 5

Turn off the heat and add 1 tablespoon oil to the empty skillet. Add the shallots and let the skillet cool for 2 to 3 minutes. Turn the heat back to medium and toss the shallots until browned, 2 to 4 minutes. Move the shallots to a plate.

  6. 6

Add the remaining 1 tablespoon oil to the skillet along with the onion, garlic, and a pinch of salt; cook and stir for about 1 minute. Stir in the tomato paste and cook until lightly toasted, about 2 minutes.

  7. 7

Pour in the red wine vinegar and white wine and bring to a boil, scraping up the browned bits from the pan with a wooden spoon. Raise the heat to medium-high and add the sugar, cinnamon, allspice, cloves, oregano, bay leaves, and rosemary sprigs. Stir to combine and cook until reduced by about half, 2 to 3 minutes.

  8. 8

Return the browned beef and shallots to the skillet and gently toss to coat. Add 2 cups beef broth and bring to a simmer.

  9. 9

Lower the heat to low or medium-low. Cover and simmer gently for 1 hour, then uncover and cook for at least 1 more hour, stirring occasionally to move the beef and shallots. Add more broth if needed during cooking and skim off some fat if you like.

  10. 10

The meat is ready when a fork goes in easily, but it does not fall apart on its own; it may take longer than 2 hours.

  11. 11

Taste and adjust the seasonings before serving.

  12. 12

    Serve and enjoy!

How easyChef Pro Scores This Recipe

easyChef Pro gives every recipe a health score from 0 to 100, built from more than 30 nutritional parameters including nutrient density, energy density and glycemic impact. It calculates rather than estimates, so the same recipe returns the same score every time.

The number is traceable. You can see exactly which nutrient moved it, so a dish scoring 78 might show fiber pushing it up while sodium pulls it down, alongside the NOVA processing level of each ingredient.

Your health goal changes the calculation itself, not just a filter. easyChef Pro applies clinically derived weighting across six health dimensions, which is why the same dish can score well for one goal and poorly for another.

Swap an ingredient or change the serving size and that math changes with it. Scoring your own version is the only way to see what your kitchen actually produces.
