    In a large bowl, mix the water, kosher salt, and sugar. Add the pork chops to the brine and soak them for no more than one hour. Drain and discard the brine. Pat the pork chops dry with paper towels.

    In a shallow dish, combine the olive oil, garlic, and rosemary. Add the pork chops and turn to coat. Cover and marinate in the refrigerator for at least 1 or 2 hours.

    Pour the balsamic vinegar into a small saucepan. Bring it to a boil and cook until reduced by half, about 10 minutes. When cooled, it should be syrupy.

    Melt the butter with the olive oil in a large skillet over medium-high or high heat. Add the onions and pears, and brown them quickly, keeping the wedges intact. Once browned, reduce the heat to low and cook for about 7 minutes, or until tender. Stir in the reduced vinegar and the salt. You can prepare the recipe up to this point several hours before grilling.

    Warm the pears on a cooler area of the grill (in the skillet) while placing the pork chops over the hot side. Cook the pork for about 3 minutes per side, or to your preferred doneness. Transfer to a serving plate, cover with aluminum foil, and let rest for a few minutes. Uncover, spoon the pear-onion sauce on top, and serve.
