Grilled Salmon with Chimichurri
Grilled Salmon with Chimichurri pairs rich, smoky fish with a vivid herb sauce that’s lively with lime, vinegar, and a touch of heat. The blend of parsley, cilantro, and dill keeps each bite fresh and aromatic, while the char from the grill adds depth. Ideal for a weeknight dinner or casual cookout when you want bright flavors and a restaurant-style finish.

- 1
For the chimichurri, place the garlic and shallot in a food processor and pulse 2 or 3 times. Add the herbs, lime juice, and vinegar. Process until finely chopped.
- 2
With the food processor running, slowly drizzle in the olive oil to emulsify. Add the lime zest, salt, and pepper to taste, and blend until smooth. Stir in the red pepper flakes. Refrigerate until ready to use.
- 3
Set up an outdoor grill for direct cooking over high heat, 450 to 550 degrees F (230 to 290 degrees C).
- 4
Coat the flesh side of the salmon fillets generously with oil and season evenly with granulated garlic, Italian seasoning, salt, and pepper. Grill the salmon, skin side down, over direct high heat for 6 to 8 minutes.
- 5
Flip the salmon, close the lid, and cook until the fish flakes easily with a fork, 4 to 6 minutes more. Move to a platter to rest for 1 to 2 minutes. Remove the salmon skin from the fillets and serve with chimichurri.
