    Slowly pour the grits into the stock while stirring constantly. Reduce the heat to low; simmer, stirring occasionally, until the grits are tender and thick, 15 to 20 minutes.

    Stir in heavy cream to loosen the grits. Add the Gouda cheese and butter, stirring until melted and smooth.

    While the grits cook, make the shrimp sauce: Place the bacon in a large, deep skillet over medium heat; cook until the fat renders, about 3 minutes.
