Preheat an outdoor grill to high heat. Soak wood chips in a pan of water and set them next to the grill.

Combine sage, pepper, celery salt, basil, and oil in a bowl.

Remove and discard the neck and giblets from the turkey. Rinse the turkey and pat it dry; place it in a large, disposable roasting pan and rub it all over with the herb mixture. Turn the turkey breast-side down and loosely tent with aluminum foil.

Set the roasting pan on the preheated grill. Toss a handful of wood chips onto the coals. Close the lid and cook for 1 hour.

Add about two more handfuls of soaked wood chips to the fire. Drizzle 1/2 of the honey over the turkey and tent with foil again. Close the lid and continue cooking until the bone is no longer pink and the juices run clear, 1 1/2 to 2 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).

Leave the turkey on the grill. Remove the foil and carefully turn the turkey breast-side up; baste with the remaining honey. Cook uncovered for 15 more minutes; the cooked honey will be very dark.
