Indonesian Chicken Skewers with Peanut Sauce (Satay Ayam)

Satay Ayam features succulent, marinated chicken threaded onto skewers and seared until lightly charred, then served with a sweet-salty peanut sauce brightened by lime.     Mix chicken thighs, 3/4 teaspoon salt, white pepper, and sunflower seed oil in a bowl. Cover and chill in the refrigerator for 1 to 2 hours.

    Soak wooden skewers in water to keep them from burning during cooking.

    In a small saucepan, bring water, peanut butter, kecap manis, brown sugar, garlic, and 1/2 teaspoon salt to a boil, stirring to combine. Take off the heat and add lime juice; pour the peanut sauce into a bowl.

    Thread the marinated chicken onto skewers; brush 2 tablespoons of peanut sauce over the chicken skewers.

    Heat a grill pan or large skillet over medium-high heat. Cook the chicken skewers in batches on the grill pan until the chicken is no longer pink in the center, 1 to 2 minutes per side. Serve the skewers with the remaining peanut sauce.
