Indonesian Chicken Skewers with Peanut Sauce (Satay Ayam)
Satay Ayam features succulent, marinated chicken threaded onto skewers and seared until lightly charred, then served with a sweet-salty peanut sauce brightened by lime. The rich nuttiness and hint of caramel from kecap manis make it boldly flavorful yet quick to cook, ideal for weeknight dinners or sharing as an appetizer.

- 1
Mix chicken thighs, 3/4 teaspoon salt, white pepper, and sunflower seed oil in a bowl. Cover and chill in the refrigerator for 1 to 2 hours.
- 2
Soak wooden skewers in water to keep them from burning during cooking.
- 3
In a small saucepan, bring water, peanut butter, kecap manis, brown sugar, garlic, and 1/2 teaspoon salt to a boil, stirring to combine. Take off the heat and add lime juice; pour the peanut sauce into a bowl.
- 4
Thread the marinated chicken onto skewers; brush 2 tablespoons of peanut sauce over the chicken skewers.
- 5
Heat a grill pan or large skillet over medium-high heat. Cook the chicken skewers in batches on the grill pan until the chicken is no longer pink in the center, 1 to 2 minutes per side. Serve the skewers with the remaining peanut sauce.
