Heat 2 tablespoons sesame oil in a wok or large skillet over medium-high heat. Add the pork and stir to coat it evenly. Add the cauliflower rice, broccoli florets, mushrooms, celery, and garlic. Cook, stirring often, until the pork is slightly pink in the center, 5 to 7 minutes.

Push the pork and cauliflower mixture to one side of the wok. Pour the beaten eggs into the empty side and stir until the eggs are cooked and scrambled, about 2 minutes. Combine the pork and cauliflower mixture with the eggs. Stir in tamari, green onions, and the remaining 1 tablespoon sesame oil. Stir-fry until hot, about 2 more minutes.
