Bright Lemon Chicken with Asparagus Stir-Fry

Bright Lemon Chicken with Asparagus Stir-Fry balances crisp-tender asparagus and juicy, lightly crusted chicken with a glossy lemon-soy sauce that’s both tangy and subtly sweet. It tastes fresh and vibrant with a hint of heat from red chile flakes, perfect for a quick weeknight dinner or a light spring meal. Serve it hot with rice or noodles to soak up the citrusy pan sauce.

Bright Lemon Chicken with Asparagus Stir-Fry
  1. 1

Whisk chicken broth, lemon juice, soy sauce, brown sugar, lemon zest, and 1 teaspoon cornstarch together in a bowl; set aside.

  2. 2

Combine chicken, 1/4 cup cornstarch, salt, and black pepper in a bowl and toss to coat evenly.

  3. 3

Heat 1 tablespoon oil in a wok or large skillet over medium-high. Cook the asparagus and the onion, stirring often, until tender-crisp, 4 to 5 minutes. Remove the vegetables from the pan; set aside.

  4. 4

Heat the remaining oil in the same wok over medium-high and cook the chicken for 3 minutes without stirring, making sure not to overcrowd the pan. You may need to cook in two batches. Flip the chicken and continue cooking, breaking up any large pieces, until evenly browned, 3 to 4 minutes more.

  5. 5

Return the asparagus and onion to the pan. Whisk the sauce and pour it in, scraping up any browned bits. Stir constantly until the sauce comes to a simmer and thickens, 1 to 2 minutes. An instant-read thermometer inserted into the center of the chicken should read at least 165 degrees F (74 degrees C). Season with salt and ground black pepper. Garnish with crushed red chilies and lemon slices.
