Mahi Sorkh Shodeh (Persian Fried Fish)
  1. 1

Grind saffron threads into a fine powder using a small mortar and pestle. Move to a small bowl and stir in boiling water. Cover and let sit.

  2. 2

Combine flour, salt, turmeric, pepper, onion powder, and garlic powder on a large plate and spread into an even layer.

  3. 3

Pat the fish dry thoroughly with paper towels. Cut into 3-inch-long pieces and season with salt. Coat the fish on all sides in the flour mixture.

  4. 4

Heat oil in a large pan over medium to medium-high heat. Add the fish and fry on one side until nicely golden, about 7 minutes. Flip the fish, drizzle the saffron water over the top, and fry the other side until golden and the fish flakes easily with a fork, about 5 more minutes.

  5. 5

Move the fish to a serving platter. Drizzle orange juice over the top and serve with orange and lime wedges.
