Make-Ahead Spinach and Mozzarella Breakfast Strata

Make-Ahead Spinach and Mozzarella Breakfast Strata

    Melt butter in a medium skillet over medium heat. Add onion and cook until soft, about 5 minutes. Stir in herbes de Provence, salt, and pepper; cook for 1 minute more. Mix in spinach, remove from heat, and set aside.

    Coat the inside of a 3-quart (9x13-inch) baking dish with cooking spray. Arrange 1/3 of the bread cubes in an even layer on the bottom. Add 1/3 of the spinach mixture and 1/3 of the mozzarella cheese on top. Repeat these layers two more times with the remaining bread, spinach mixture, and cheese.

    Combine eggs, milk, salt, and pepper in a medium bowl. Whisk until blended. Pour evenly over the layered bread and spinach in the baking dish. Cover with plastic wrap and refrigerate for at least 8 hours and up to 1 day.

    Take the dish out of the refrigerator 30 minutes before baking to let the pan come to room temperature.

    Meanwhile, preheat the oven to 350 degrees F (175 degrees C).
