    In a large bowl, whisk together orange juice, lemon juice, salt, onion powder, garlic powder, black pepper, and sugar until the seasonings dissolve. Add the scallops, yellow squash, zucchinis, and portobello mushroom to the mojito marinade and toss to coat.

    Cover the bowl with plastic wrap and refrigerate for 8 hours to overnight.

    Preheat the oven to 400 degrees F (200 degrees C).

    Thread onto a skewer, in order, a piece of mushroom, yellow squash, zucchini, and a scallop. Repeat so there are two of each item on the skewer; repeat with the remaining skewers. Evenly sprinkle fresh basil over the skewers.

    Using a spoon, carefully remove the tomato insides and discard the tomato insides.

    Pour the broccoli with cheese sauce into a microwave-safe bowl and microwave until the broccoli is tender and the sauce is melted, 3 to 5 minutes.

    Stir the broccoli with cheese sauce and the rice together in a bowl, then spoon the mixture into the hollowed-out tomatoes. Place 2 strips of American cheese on top in a crossing pattern.
