Preheat the oven to 400 degrees F (200 degrees C).

Peel off the outer skin from the garlic head, leaving the individual cloves intact. Slice 1/4 to 1/2 inch from the top to expose all the cloves. Rub the top with olive oil, using your fingers to work it in. Wrap in foil and set in a baking dish.

Roast in the preheated oven for 45 minutes.

When the garlic is about halfway through roasting, put the potatoes in a large pot and cover with salted water; bring to a boil. Lower the heat to medium-low and simmer until tender but still firm, 15 to 20 minutes. They should break once when poked with a fork. Drain.

Take the garlic out of the oven. Squeeze the garlic from each clove into a small bowl and mash with a fork.

Return the potatoes to the pot and combine with the cream cheese, margarine, milk, sour cream, and garlic. Stir in the salt and pepper.
