Pistachio-Crusted Salmon
Pistachio-Crusted Salmon pairs tender, flaky fish with a nutty, toasty crust accented by Parmesan and panko. A swipe of Dijon adds tang while lemon brightens each bite, making it special enough for guests yet quick enough for a weeknight. Serve it hot from the oven with crisp edges and a vibrant citrus finish.

- 1
Preheat the oven to 375 degrees F (190 degrees C).
- 2
In a small bowl, combine pistachios, bread crumbs, Parmesan cheese, and butter; stir with a fork until evenly mixed.
- 3
Lightly season the salmon fillets with salt and pepper on both sides.
- 4
Heat olive oil in a large oven-safe skillet over medium heat. Sear the salmon fillets, flesh side down, for 2 to 3 minutes. Turn off the heat and flip the salmon so the skin side is down.
- 5
Brush the tops of the salmon evenly with Dijon mustard. Add the pistachio mixture on top, pressing it onto the salmon.
- 6
Bake in the preheated oven until the salmon flakes easily with a fork, 10 to 12 minutes. Serve with lemon wedges.
