Pistachio-Crusted Salmon

    Preheat the oven to 375 degrees F (190 degrees C).

    In a small bowl, combine pistachios, bread crumbs, Parmesan cheese, and butter; stir with a fork until evenly mixed.

    Lightly season the salmon fillets with salt and pepper on both sides.

    Heat olive oil in a large oven-safe skillet over medium heat. Sear the salmon fillets, flesh side down, for 2 to 3 minutes. Turn off the heat and flip the salmon so the skin side is down.

    Brush the tops of the salmon evenly with Dijon mustard. Add the pistachio mixture on top, pressing it onto the salmon.
