- 1
Season the tops of the salmon fillets with salt, pepper, and a little cayenne. Brush half of the melted butter over the surface. Sprinkle with chopped dill, then drape 2 slices of smoked salmon over each fillet to cover the surface and sides. Refrigerate the prepared fish until needed.
- 2
Preheat the oven to 400 degrees F (200 degrees C).
- 3
Spread the mashed potatoes into 2 baking dishes (such as oval ramekins), and place the salmon fillets on top. If desired, sprinkle a little cayenne over the top. Set the baking dishes on a baking sheet to make transferring easier.
- 4
Roast the salmon in the preheated oven until the internal temperature at the center of the thickest part of each fillet reaches 135 to 140 degrees F (57 to 60 degrees C), about 00:20:00.

After roasting, brush the remaining melted butter over the tops of the salmon fillets and garnish with green onions. Serve with lime wedges.
