Pizza Bianca with Prosciutto

    Preheat a gas grill with all burners set to High for 10 to 15 minutes.

    Shape the pizza dough into an 8- to 10-inch disc and brush the dough with olive oil.

    Lower the flame on half of the grill burners to Low to create zones of direct and indirect heat.

    Carefully place the dough on the grill over direct heat and close the lid; grill until the bottom is just barely cooked and has char marks, 1 to 3 minutes.

    Rotate the crust ninety degrees without flipping it over and grill until the crust shows light grill marks, 1 to 3 minutes.

    Carefully lift the par-grilled dough off the grill; spread ricotta over the dough and sprinkle with salt and Italian seasoning. Place cheese on top, then add the prosciutto evenly over the cheese.

    Return the pizza to the grill over indirect heat and grill until the cheese is melted, about 3 minutes; carefully remove the pizza from the grill.
