    Put the cauliflower florets in a large roasting pan. Separate the onion quarters into individual layers and set them aside.

    Warm a small skillet over medium heat. Cook and stir the coriander seeds and cumin seeds in the hot pan until slightly darkened, about 5 minutes. Take off the heat, crush them coarsely with a mortar and pestle, and move them to a medium bowl.

    Add the oil, vinegar, curry powder, garlic, paprika, chili powder, cumin, and salt to the crushed seeds; whisk until combined. Pour the dressing over the cauliflower and toss to coat. Spread it in a single layer in the pan and sprinkle with pepper.
