    Bring a large pot of lightly salted water to a boil. Add the green beans and boil for 3 to 4 minutes until just tender. Drain the beans and immediately plunge them into ice water. Let them sit in the ice water until cold, then drain well and set aside.

Reduce the heat to medium, stir the shallots into the pancetta fat, and cook gently until the shallots are dark golden brown, about 10 minutes. Return the pancetta and add the green beans to the skillet; toss and cook until warmed through, about 2 minutes. Season to taste with salt and pepper before serving.
