Shearers' Mince and Potato Hot Pot
  1. 1

Preheat the oven to 350 degrees F (175 degrees C).

  2. 2

Put the potato slices in a medium bowl and add enough water to cover them.

  3. 3

Heat oil in a medium saucepan over medium heat. Add the ground beef, onion, tomato sauce, and Worcestershire sauce. Season with salt and pepper. Cook until the beef is browned evenly and the onions are tender, about 10 minutes.

  4. 4

Meanwhile, prepare the cheese sauce. In a separate medium saucepan over medium heat, melt 1/4 cup butter, then whisk in the flour until well combined. Gradually stir in the milk. Cook and stir until it thickens, about 5 minutes. Lower the heat and stir in the Cheddar cheese. Season with salt and pepper to taste.

  5. 5

Line a medium baking dish with half of the potato slices. Pour in the ground beef mixture and add the mushrooms on top. Cover with the cheese sauce mixture. Top with the remaining potatoes. Dot with 2 tablespoons butter.

  6. 6

Bake in the preheated oven until lightly browned, 30 to 40 minutes.
