One-Pan Steak and Shrimp Fajitas

    Gather all ingredients.

    Preheat the oven to 425 degrees F (220 degrees C).

    Line 2 sheet pans with parchment paper or aluminum foil.

    In a small bowl, mix together the chili powder, smoked paprika, oregano, salt, cumin, garlic powder, and cayenne.

    In a large bowl, combine the green bell pepper, red bell pepper, and onion with 1 1/2 tablespoons olive oil and half of the dry seasoning mixture.

    Toss until evenly coated with the seasoning mixture, then spread in a single layer on one of the prepared pans.

    Meanwhile, in the same large bowl, toss the steak and shrimp with the remaining 1 1/2 tablespoons olive oil.

    Add the remaining seasoning and toss again.

    Arrange the steak on one side of the second prepared pan and the shrimp on the other side.

    Place the steak and shrimp on a rack below the vegetables and roast both pans for 10 minutes.

    After 10 minutes, switch the rack positions of the pans, moving the lower pan up and placing the other pan on the lower rack.

    Continue roasting until the shrimp is pink and tightly curled, the steak is cooked to medium, and the vegetables are tender, about 5 minutes more.

    An instant-read thermometer inserted in the center of the steak should read 140 degrees F (60 degrees C).

    If the steak or vegetables need more time, transfer the shrimp to a plate and keep warm while the other ingredients finish cooking.

    Squeeze the juice of half a lime over the contents of each sheet pan.

    To serve, place a few steak strips, onion and pepper strips, 2 shrimp, and some cilantro on each tortilla.
