Simple Apricot-Glazed Meatloaf Recipe
  1. 1

Set the oven to 350 degrees F (175 degrees C) and let it preheat.

  2. 2

In a large bowl, mix together the ground beef, onion, bread crumbs, egg, 1 ½ tablespoons apricot preserves, kosher salt, garlic, and black pepper until well combined. Press the mixture into a 9x5-inch loaf pan.

  3. 3

Bake in the preheated oven for 45 minutes.

  4. 4

Meanwhile, stir together the ketchup, ½ cup apricot preserves, brown sugar, hot sauce, Worcestershire sauce, and cider vinegar in a medium bowl.

  5. 5

Take the meatloaf out of the oven and pour the glaze over the top. Return it to the oven and cook until the center is no longer pink, about 15 minutes more. An instant-read thermometer inserted into the center should register at least 160 degrees F (70 degrees C).

  6. 6

Let the meatloaf rest for 5 minutes before serving.
