Chicken Meatloaf

    Assemble all the ingredients.

    Preheat the oven to 350 degrees F (175 degrees C). Lightly coat an 8- x 4-inch loaf pan with cooking spray.

    In a large bowl, gently mix the chicken, onion, panko, Parmesan cheese, parsley, mayonnaise, garlic, thyme, Worcestershire sauce, salt, garlic powder, and black pepper until just combined. Do not overmix.

    Spoon the mixture into the prepared loaf pan. In a small bowl, stir together the ketchup, brown sugar, mustard, and vinegar until blended. Spread the ketchup mixture evenly over the top of the meatloaf.

    Bake, uncovered, in the preheated oven until an instant-read thermometer inserted into the thickest part of the meatloaf registers 165 degrees F (73 degrees C), 50 to 55 minutes.
