Skinny Chicken Casserole
Skinny Chicken Casserole is a lighter take on a cozy bake, featuring whole wheat rigatoni and tender chicken tossed in a tangy light mayo–Parmesan mixture. A shower of panko and extra cheese bakes to a crisp, golden top for contrast to the saucy pasta beneath. Great for weeknights or make-ahead meals when you want comfort without feeling heavy.

- 1
Preheat the oven to 400 degrees F (200 degrees C). Coat a medium casserole dish with cooking spray.
- 2
Bring a large pot of lightly salted water to a boil. Cook the rigatoni in the boiling water, stirring occasionally, until slightly firm, about 8 minutes. Drain and set aside.
- 3
Combine the mayonnaise, garlic, onion, salt, and pepper in a medium bowl. Add 1 1/4 cup Parmesan cheese and mix well. Stir in the cooked pasta and the chicken, ensuring everything is evenly coated.
- 4
Transfer the mixture to the prepared casserole dish. Sprinkle the remaining 1/4 cup Parmesan cheese and the panko bread crumbs on top. Cover with aluminum foil.
- 5
Bake in the preheated oven for 30 minutes. Remove from the oven, uncover, then return to the oven. Bake until the chicken is no longer pink in the center and the juices run clear, about 10 minutes more. Let stand for 1 to 2 minutes before serving.
