Steaks with Truffle Butter
Steaks with Truffle Butter pairs juicy, pan-seared New York strips with a luxurious, umami-packed truffle butter that melts into every bite. The contrast of a well-browned crust and tender, medium-rare center highlights the beef’s depth while the truffle adds earthy aroma. Ideal for date night or a special dinner, it’s indulgent without fussy technique.

- 1
Make the truffle butter by mixing butter, truffle oil, shaved truffle, and sea salt in a bowl. Cover and chill for at least 1 hour.
- 2
When ready to cook the steaks, put a baking pan in the oven and preheat to 350 degrees F (175 degrees C).
- 3
Season the steaks with sea salt and pepper.
- 4
Heat oil in a heavy skillet over medium-high until it shimmers. Add the steaks, working in batches if needed, and sear until browned, about 3 minutes per side.
- 5
Take the hot baking pan out of the oven and place the seared steaks into the pan.
- 6
Bake in the preheated oven until the steaks are firm and reddish-pink and juicy in the center, 8 to 10 minutes. An instant-read thermometer inserted into the center should register 130 degrees F (54 degrees C) for medium-rare.
- 7
Let the steaks rest for 5 minutes.
- 8
To serve, place 1 tablespoon truffle butter on top of each steak.
