Boxed Stuffing Mix Meatloaf with Ketchup Glaze
  1. 1

Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Line an 8- x 4-inch loaf pan with a double layer of aluminum foil, leaving a 3-inch overhang on the long sides. Lightly coat the foil with cooking spray and set the pan on a baking sheet.

  2. 2

Using your hands, mix the beef, stuffing mix, water, egg, salt, poultry seasoning, and 1/2 cup of the ketchup in a large bowl until evenly combined, taking care not to overmix.

  3. 3

Press the mixture into the prepared loaf pan on the baking sheet.

  4. 4

Bake in the preheated oven until the top is browned and the sides are bubbly, about 35 minutes.

  5. 5

While the meatloaf bakes, whisk together the brown sugar and the remaining 1/2 cup ketchup in a small bowl until smooth. Remove the meatloaf from the oven and spread the ketchup mixture evenly over the top.

  6. 6

Return to the oven and continue baking at 350 degrees F (175 degrees C) until an instant-read thermometer inserted into the thickest part of the meatloaf reads 160 degrees F (71 degrees C), 10 to 15 minutes. Remove from the oven and let it rest for 5 minutes.

  7. 7

Lift the meatloaf out of the pan using the foil overhang as handles and transfer it to a cutting board. Cut into 8 slices.
