    Transfer the pork to a plate lined with paper towels to drain. Discard the paper towel, and refrigerate until needed.

    For the sauce, add the oil and garlic to a small saucepan and set over medium heat. Cook, stirring, until the garlic is fragrant, about 30 seconds.

    Stir in the hoisin sauce, peanut butter, and water. Bring to a boil, then remove from the heat. Add the chili paste, let cool, and set aside.

    When ready to assemble the bowls, bring 5 cups of water to a boil in a large saucepan. Add the rice noodles and stir to prevent clumping. Boil and stir for 2 to 3 minutes.

    Drain into a mesh strainer and rinse thoroughly with cold water.

    Evenly divide the vermicelli among 4 serving bowls. Working in sections, arrange the cooked shrimp, ground pork mixture, lettuce, herbs, and carrots on top of the vermicelli.
