Honey-Balsamic Bacon Wrapped Pork Loin

Honey-Balsamic Bacon Wrapped Pork Loin balances smoky, crisp bacon with a juicy, tender center and a lacquer of honey and balsamic for gentle sweetness and tang. Minced onion, red wine, and rosemary add aromatic depth, while golden raisins bring a subtle fruity finish. It’s an impressive dinner centerpiece for holidays, special gatherings, or any Sunday roast.

  1. 1

Preheat the oven to 375 degrees F (190 degrees C). Line a shallow roasting pan with aluminum foil.

  2. 2

Season the pork loin with salt and pepper. Wrap the bacon slices around the pork loin and secure them with toothpicks.

  3. 3

Heat a large skillet over medium-high heat. Cook the pork loin in the hot skillet until it is golden brown on all sides, about 10 minutes. Move the pork loin to the prepared roasting pan.

  4. 4

In a medium bowl, mix the onion, honey, balsamic vinegar, red wine, and rosemary until evenly combined; spread the mixture over the pork loin.

  5. 5

Roast the pork loin in the preheated oven for 15 minutes, then sprinkle with the raisins. Continue roasting until an instant-read thermometer inserted in the center reads 145 degrees F (63 degrees C), about 15 minutes more. Remove from the oven and let it rest for 5 minutes before taking out the toothpicks and slicing.
