    Whisk the olive oil, vinegar, hot sauce, salt, and black pepper together in a microwave-safe glass or ceramic bowl.

    Layer the garlic, chopped onion, sliced onion, zucchini, olives, cabbage, jalapeno, and black beans, in that order, over the hot sauce mixture. Cover the bowl with plastic wrap and poke a few holes in the top.

    Microwave for 5 minutes; stir, cover again with plastic wrap, and microwave until the filling is hot throughout, about 5 minutes more.

    Spoon the hot filling in a line across the center of a tortilla. Fold the opposite edges of the tortilla to overlap the filling. Roll one of the opposite edges around the filling to form a burrito. Repeat with the remaining tortillas and filling.
