Whisk the eggs, milk, and salt together in a large bowl. Heat the butter in a large skillet over medium-high heat. Pour in the egg mixture; cook and stir until the eggs are fully set, about 5 minutes.

Break the cooked eggs into small pieces and place them in a large bowl. Set aside.

Heat the same large skillet over medium heat. Cook and stir the sausage and the garlic in the hot skillet for 5 minutes, then add the onion; continue to cook and stir until the sausage is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease.
