Whole Roasted Sweet Potatoes

    Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or aluminum foil.

    Scrub the potatoes and pat them dry with a paper towel. Prick each potato about 5 times with a fork or sharp knife. Rub the potatoes all over with oil and salt to help crisp the skin while baking, then place them on the prepared baking sheet.

    Bake in the preheated oven until soft inside, about an hour. Check doneness by gently squeezing with an oven mitt, or pierce with a knife or fork to feel for resistance. If there is resistance, return to the oven for another 10 to 15 minutes (see Cook’s Note below for a cooking time guide).

    Slice the top of the potato, fluff the inside with a fork, add any toppings you like, and serve right away.
