Put the alligator meat in a medium bowl. Pour in the vinegar and season with salt and pepper. Mix until evenly combined. Cover the bowl and refrigerate for about 10 minutes.

Meanwhile, put the cornmeal, flour, garlic powder, black pepper, and cayenne pepper into a resealable plastic bag.

Squeeze off the excess liquid from a handful of alligator meat and place it in the resealable bag. Seal the bag and shake to coat. Transfer the meat to a plate, shaking off any extra cornmeal mixture. Repeat with the remaining meat, one handful at a time.
