Oven-Baked Falafel Patties

    Wrap the onion in cheesecloth and squeeze out as much liquid as you can; set aside. Put the garbanzo beans, parsley, garlic, cumin, coriander, salt, and baking soda into a food processor and process until coarsely pureed. Combine the garbanzo bean mixture with the onion in a bowl, then stir in the flour and the egg. Form the mixture into four large patties and let them stand for 15 minutes.

    Preheat the oven to 400 degrees F (200 degrees C).

    Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the patties to the skillet and cook until golden brown, about 3 minutes per side.

    Move the skillet to the preheated oven and bake until heated through, about 10 minutes.
