Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with parchment paper.

Place the cooked chicken cubes in a food processor and pulse until the chicken looks like crumbs. Add the shredded Cheddar and Monterey Jack cheese and the jalapeno cream cheese. Pulse 2 or 3 times to combine. If the mixture seems dry, add more cream cheese, 1 tablespoon at a time.

Spoon a heaping teaspoon of the chicken-cheese mixture onto the bottom corner of a wonton wrapper. Leave a 1/2 inch border around the wonton. Brush the edges with water and fold the opposite corner over to make a triangle. Press to seal the edges. Repeat with the remaining wontons.

Arrange the wontons on the prepared baking sheet. Spray lightly with cooking spray. Turn them over and lightly spray the other side with cooking spray.
