Brie and Prosciutto Asparagus Bundles

Tender asparagus is briefly marinated in a tangy Dijon vinaigrette, then bundled in salty prosciutto and finished under the broiler with melty Brie and a toasty walnut crunch. The contrast of savory, nutty, and lightly acidic flavors makes it a standout for spring gatherings. Serve Brie and Prosciutto Asparagus Bundles as an elegant appetizer or a luxurious side dish.

Brie and Prosciutto Asparagus Bundles
  1. 1

Place the asparagus spears in a resealable plastic bag.

  2. 2

Whisk the olive oil, vinegar, and Dijon mustard in a small bowl until well combined; pour into the bag with the asparagus and toss to coat evenly. Marinate at room temperature for 1 hour.

  3. 3

Preheat the oven to 400 degrees F (200 degrees C).

  4. 4

Divide the asparagus into bundles of 3 stalks. Cut the prosciutto slices in half lengthwise; lay them on a cutting board. Wrap 1 piece of prosciutto around each asparagus bundle to make 7 or 8 bundles; place the bundles in a 9x13-inch baking dish.

  5. 5

Bake in the preheated oven until the asparagus is tender, 14 to 16 minutes. Move the baking dish to a wire rack; turn on the broiler. Place 1 Brie slice on top of each bundle; sprinkle with the crushed walnuts.

  6. 6

Broil until the cheese starts to melt, about 1 minute.
