Buffalo Tempeh Sliders

Buffalo Tempeh Sliders deliver tangy heat and a satisfyingly firm bite from marinated, seared tempeh tucked into soft pita. A blue cheese–Greek yogurt topping with celery, bell pepper, and cilantro adds cool contrast, crunch, and freshness. Buffalo Tempeh Sliders

    Put the tempeh in a large bowl and cover it with Buffalo sauce. Let it marinate for 10 to 20 minutes.

    Take the tempeh out of the Buffalo sauce, keeping the sauce. Heat oil in a large skillet over medium-high heat. Cook the tempeh in a single layer, working in batches, until warmed through and lightly browned, about 3 minutes per side. Pour some Buffalo sauce back over the tempeh to coat.

    In a large bowl, combine the blue cheese, cilantro, green bell pepper, celery, and onion. Mix in enough Greek yogurt so the topping just holds together.

    Split the tempeh pieces among the pita pockets; add a spoonful of the topping. Finish with the remaining Buffalo sauce on top.
