Calamari in a Creamy White Wine Sauce

Calamari in a Creamy White Wine Sauce pairs tender squid with linguine in a peppery white wine–basil cream that’s rich yet lively. Garlic, cherry peppers, and a touch of red pepper flakes add gentle heat, while Parmesan rounds it out. Ideal for a cozy weeknight dinner or a special date-night pasta.

  1. 1

Bring a large pot of lightly salted water to a boil. Cook the linguine at a boil until slightly firm to the bite, 8 to 10 minutes; drain.

  2. 2

Heat olive oil in a large skillet over medium-high heat. Add the garlic, cook and stir until golden brown. Add the squid; cook until it turns white. Stir in the white wine and cherry peppers; bring to a simmer and cook until the wine is reduced by half, about 3 minutes.

  3. 3

Stir the cornstarch into the cream in a small bowl, then add it to the simmering calamari mixture; season with basil, pepper flakes, salt, and black pepper. Stir until the sauce is thickened.

  4. 4

Add the linguine to the sauce; toss until evenly coated. Sprinkle with Parmesan cheese.
