    Combine the apples and lemon juice in a bowl and toss to coat.

    Place about half of the apples in a slow cooker with the cinnamon candies, brown sugar, ginger, and cloves; stir. Pour in enough apple juice to almost, but not quite, cover the apples.

    Cook on Low, stirring now and then, until the candies dissolve, about 1 hour.

    Turn the heat to High and cook until the apples start to lose their shape, about 4 hours. Add the remaining apples to the slow cooker. Lower the heat to Low and cook until it reaches the desired thickness, at least 3 hours.
