    Put the pork, fennel seeds, orange zest, salt, black pepper, Italian seasoning, red pepper flakes, and nutmeg in a bowl and gently stir with a fork to combine. Do not overmix. Cover and refrigerate overnight.

    Check the seasoning before using: Shape about 2 teaspoons of the sausage into a small patty and fry in a skillet over medium heat until browned. Let cool for 1 to 2 minutes and taste for seasoning.

    Cover a cutting board with plastic wrap. Divide the sausage into 6 equal portions, roll into balls, and wrap each ball in plastic wrap. Press each into a patty and discard the plastic.
