Portobello Mushrooms Filled with Clam-Parmesan Stuffing

    Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13-inch pan with 2 tablespoons olive oil.

    Use a dry vegetable brush or paper towel to gently scrub the mushrooms to remove dirt. Separate the stems from the caps. With a small spoon, carefully scoop out the dark gills to make more space for the stuffing; discard the gills. Finely chop the mushroom stems and set them aside.

    Add the remaining 2 tablespoons olive oil to a skillet and heat over medium for a few minutes. Add the garlic and mushroom stems and cook, stirring constantly, for 4 to 5 minutes. Turn off the heat. Add the clams, panko, Parmesan cheese, Italian seasoning, parsley, salt, and pepper, and stir to combine.
