    Gather all ingredients. Build a campfire and let it burn until a bed of coals forms. Set a grate over the fire.

    Set a 12-inch cast iron Dutch oven on the grate. Add sausage, onion, and garlic; cook and stir until the sausage is browned and crumbly and the onion is translucent, 5 to 7 minutes.

    Stir in hash browns and bell peppers until combined. Cook, stirring occasionally, until the hash browns are hot and the peppers are tender, about 15 minutes.

    Pour the beaten eggs into the Dutch oven, letting them seep down to the bottom.
