Preheat an outdoor grill to medium-high and lightly oil the grate. Once hot, close the lid and let it heat for 5 minutes.

Dip peach halves and lemon, cut sides down, in sugar until coated. Place them on the grill and cook until soft, about 5 minutes. Move to a cutting board to cool, about 1 minute. Slice the peach and set aside 2 slices for garnish.

Add peach slices, mint leaves, and simple syrup to a cocktail shaker; squeeze the lemon into the shaker. Gently muddle. Add bourbon and ice, cover, and shake until the outside of the shaker frosts. Strain into a chilled glass; top with ginger ale, and garnish with the grilled peach slices and lemon.
