    Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, mix the mixed vegetables with the mushroom soup. Set aside.

    Put the potatoes in a large saucepan and add enough water to cover. Bring to a boil, then reduce to a medium heat and simmer until tender, about 5 minutes. Drain and set aside.

    Meanwhile, crumble the ground beef into a large skillet over medium-high heat. Cook, stirring to break up large lumps, until evenly browned. Drain the excess grease from the beef and spread it in the bottom of a 9x13 inch baking dish. Pour the vegetable mixture over the beef, arrange the potato slices on top of the vegetables, season with salt and pepper, and sprinkle cheese over the top.
