Use a spiralizer to cut the kohlrabi into thin noodle-like strands.

Place a large skillet over medium heat. Add the bacon and onion, and cook until the bacon starts to crisp and the onion is caramelized but not burning, 10 to 12 minutes.

Transfer the mixture to a small bowl, leaving 1 tablespoon of bacon grease in the skillet. If there is not enough bacon grease, add enough oil to make 1 tablespoon.

Add the kohlrabi to the skillet and season with salt. Cook over medium heat, stirring occasionally, until the kohlrabi begins to wilt and soften, 12 to 14 minutes.

Stir in the butter until melted. Add the bacon and onion mixture and stir in 1/2 of the Parmesan.
