Parmesan and Bacon Roasted Asparagus
  1. 1

Preheat the oven to 400 degrees F (200 degrees C). Line a 12x18-inch sheet pan with parchment paper.

  2. 2

Cook the bacon in a large non-stick skillet over medium heat until crisp and browned, about 8 minutes. Remove the bacon from the skillet, crumble it, and set it aside. Keep 1 tablespoon of the bacon drippings in the skillet.

  3. 3

Add olive oil, minced garlic, salt, paprika, and black pepper to the drippings in the skillet. Cook, stirring, just until the garlic is fragrant, 30 seconds to 1 minute.

  4. 4

Add the asparagus to the skillet and stir quickly to coat it with the seasoned oil. Remove the skillet from the heat and spread the asparagus in a single layer on the prepared sheet pan.

  5. 5

Roast in the preheated oven until crisp-tender, 10 to 12 minutes (see note).

  6. 6

Place the asparagus on a serving platter and sprinkle with shaved Parmesan. Top with the crumbled bacon. Garnish with fresh parsley.
