- 1
Assemble all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- 2
Cook the bacon in a large skillet over medium-high heat until evenly browned, about 10 minutes, turning occasionally to avoid burning. Drain the slices on paper towels, then crumble.
- 3
Bring a large pot of salted water to a boil. Add the potatoes and the garlic, reduce the heat to medium, and simmer until the potatoes are tender, 15 to 20 minutes.
- 4
When the potatoes are nearly done, warm the milk and butter in a small saucepan over low heat until the butter melts.
- 5
Drain the potatoes and return them to the pot. Gradually add the warm milk mixture, mashing with a potato masher or mixing with an electric mixer until smooth and creamy. Fold in the mayonnaise, sour cream, pepper, and paprika. Then fold in 1 cup Cheddar cheese and half of the bacon.
- 6
Spoon the potato mixture into the prepared baking dish. Sprinkle with the remaining cheddar cheese and bacon.
- 7
Bake until the cheese is melted, about 20 minutes.
- 8
Garnish with chopped green onions and serve warm.
