Potato Lasagna

Potato Lasagna swaps noodles for thin layers of tender red potatoes, tucked around sauté-style vegetables and a rich vodka marinara. A trio of smoked Gouda, mozzarella, and sharp Cheddar melts into a stretchy, savory blanket that bakes to a golden finish. It’s cozy and satisfying for a weeknight casserole or casual dinner with friends.

Potato Lasagna
  1. 1

Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.

  2. 2

In a medium bowl, combine the carrots, bell pepper, onion, garlic, and spinach. In another bowl, mix together the Gouda cheese, mozzarella cheese, and sharp Cheddar cheese. Set aside.

  3. 3

Place two layers of sliced potatoes in the bottom of the prepared casserole dish. Season the potatoes with a little salt and pepper. Add a layer of the spinach mixture, then pour about 1/2 cup of sauce over everything. Sprinkle with some of the cheese blend. Repeat the layers with the remaining potatoes, vegetables, sauce, and cheese, finishing with cheese on top.

  4. 4

Bake, covered, for 35 minutes in the preheated oven. Remove the lid, and bake for 10 more minutes until the top is browned.
