    Combine the bread flour, sweet potatoes, whole wheat flour, cake flour, eggs, brown sugar, water, butter, milk powder, yeast, and salt in a bowl and mix until the dough comes together, adding more water if it seems too dry. Turn the dough out onto a floured surface and knead until smooth and elastic, 6 to 8 minutes.

    Put the dough in an oiled bowl and cover with plastic wrap or a damp towel. Set the bowl in a warm spot and let it rise until doubled in size, about 1 hour.

    Deflate the dough and divide it into 16 pieces, shaping each into a ball. Arrange the dough balls on oiled baking sheets, cover, and let them rise until doubled in size, about 40 minutes.
