Takeout-Style Beef with Broccoli

    In a bowl, whisk together oyster sauce, sherry, sesame oil, soy sauce, sugar, and cornstarch; stir until the sugar dissolves.

    Place the steak in a shallow bowl. Pour the oyster sauce mixture over the meat and stir to coat; cover and marinate in the refrigerator for at least 30 minutes.

    Heat vegetable oil in a wok or large skillet over medium-high heat. Add the ginger and the garlic; let them sizzle for about 1 minute to flavor the oil, then remove and discard them.

    Stir in the broccoli. Toss and stir until it turns bright green and is almost tender, 5 to 7 minutes; remove the broccoli from the wok and set it aside.
