Roasted Vegetable Medley

Roasted Vegetable Medley

    Assemble all ingredients. Preheat the oven to 425 degrees F (220 degrees C). Lightly grease two baking sheets with 1/2 tablespoon olive oil each.

    Arrange the yam, parsnip, and carrots on the baking sheets.

    Bake in the preheated oven for 30 minutes, then add the zucchini and asparagus, and drizzle with the remaining 1 tablespoon olive oil. Continue baking until all the vegetables are tender, about 30 minutes more.

    When tender, take the vegetables out of the oven and let them cool on the baking sheet for 30 minutes.
