Sausage Potato Casserole
  1. 1

    Assemble all the ingredients.

  2. 2

Preheat the oven to 350 degrees F (175 degrees C). Lightly coat a 2-quart baking dish with grease.

  3. 3

Boil the sliced potatoes in a large saucepan of lightly salted water for 5 minutes. Drain.

  4. 4

Meanwhile, cook the sausage in a 10-inch skillet over medium heat until it is no longer pink, breaking it into crumbles. Add the onion and peppers; cook about 3 minutes more, or until just starting to soften; drain the sausage mixture and set aside.

  5. 5

In a medium bowl, whisk together the soup and milk. Stir in 3/4 cup of the cheese and the black pepper.

  6. 6

In the prepared dish, layer half the potatoes, half the soup mixture, and half the sausage mixture. Repeat the layers.

  7. 7

Cover and bake for 45 to 50 minutes, or until the potatoes are tender. Sprinkle with the remaining 1 1/4 cups cheese. Bake, uncovered, for 10 minutes, or until the cheese is melted.

  8. 8

Let stand for 15 minutes before serving. Garnish with chives.
