Place the chicken in a 6-quart slow cooker.

Stir together the yogurt, lemon zest, lemon juice, olive oil, salt, basil, oregano, garlic powder, onion powder, thyme, and black pepper until well combined.

Add half of the yogurt mixture to the chicken and toss to coat. Reserve and refrigerate the remaining yogurt mixture for later. Cover and cook on Low until the chicken is tender, 4 to 5 hours.

Remove the chicken from the slow cooker and roughly chop it. If you like, remove half (or more) of the cooking liquid from the slow cooker for a thicker, less saucy result; otherwise, leave all the cooking liquid for a thinner, very saucy result.

Return the chopped chicken to the slow cooker. Add a 1/4 cup of the reserved yogurt mixture and stir to combine. Taste the sauce and season with salt and pepper. Cover the slow cooker again and let the chicken warm through, about 10 minutes. Serve the remaining yogurt mixture alongside the chicken, if desired.
